Sometimes, when the weather gets a little dark and stormy… we like to make Dark ‘n’ Stormies! And sometimes we like to make them even when the weather is beautiful. Ginger beer has an awesomely unique flavor, and it’s one of my all-time favorite drinks (though it is, sadly, non-alcoholic); the combination of the tangy ginger beer and syrupy dark rum is deeply comforting. Plus, I just love the way the drink looks. Nick made these delicious cocktails last week as we were enjoying the view from our new apartment on a beautiful clear day. It seemed like the perfect way to settle into our new life in Chicago, and, of course, I wanted to share the recipe with you to use for any occasion you might be toasting.
Dark ‘n’ Stormy
- 3 oz. ginger beer
- 2 oz. dark rum (I like Gosling’s best, and we’ve found it to be surprisingly cheap here in Chicago)
- slice of lime
Pour the ginger beer into a highball glass filled with ice. Slowly pour the dark rum into the glass so it settles on top of the ginger beer. Squeeze a slice of lime into the glass and use to garnish. Before drinking, stir to combine. Sit back and enjoy the view!
